Eating Oysters

Many believe Oysters are best eaten straight from the shell, immediately after opening and washing, with a small squeeze of fresh lemon and if you like it, a light dash of pepper sauce, preferably, Tabasco. The Oyster has a wonderful smooth, soft fresh texture and a very subtle, slightly savoury flavour and our Colchester Oysters are as a good as can be found. The food is best enjoyed rolling the Oyster in the pallet for a few moments to fully appreciate the delicacy. While some find the addition of a dash of lemon and pepper enhances the experience, others enjoy them without any supplementary flavouring.

 

There has always been a debate as to the best drink to complement the Oyster’s soft flavour. Some prefer the contrasting robustness of a stout, such as Guinness. Others like the effervescence of a sparkling wine; a champagne; or a carbonated water. Try a lightly chilled dry white wine, perhaps a Chablis or Frascati.

Bacon Oysters

Preparation Time: 8 mins
Cooking Time: 8-10 mins
   
Ingredients (per serving)
6 Oysters 1 bacon rasher
1/2 small onion Chopped parsley
Pepper 1/2 lemon
 

Open & clean the Oysters
Fry bacon rasher
Dry bacon on kitchen paper & finely chop
Mix with finely chopped onion & parsley
Top each Oyster with mix
Cook in warm oven for a few minutes
Add squeeze of lemon & enjoy

Fried Oysters

Preparation Time: 3 mins
Cooking Time: 3-4 mins
   
Ingredients (per serving)
6 Oysters Breadcrumbs or Oatmeal
Knob of Butter Tomato Sauce
Salt & Pepper 1/2 lemon
   

Open & clean the Oysters
Roll Oysters in Breadcrumbs or Oatmeal
Season with salt & pepper
Cook gently in pan with butter
Dry on kitchen paper
Serve with tomato sauce

Oyster Omelette

Preparation Time: 10 mins
Cooking Time: 3 - 4 mins
   
Ingredients (for 3 omelettes)
18 Oysters 6 eggs
30g butter 5cl water
salt pepper
n.b. 2 eggs & 6 Oysters per person

Open and clean Oysters
Gently poach the Oysters in water
Drain Oysters
Whisk eggs
Add salt, pepper & water
Mix all the ingredients
Melt the butter in a frying pan
Add the eggs
After a few minutes add the Oysters
Grill gently until golden outside, but not completely cooked on the inside
Double over and serve
